So much so that our chef de cuisine, Martin Moritz, stopped buying sea fish more than two years ago. Thus all our fish dishes are sourced from Lake Constance or other lakes and watercourses around Switzerland. And believe it not: our almost 90-year-old fisherwoman Trudy Schweizer still goes out fishing every day, so once a week she puts her freshly caught fish in a coolbag and brings it up to Lenzerheide by train and bus.
